THE BAKE

A little care.
A lot of layers.

Four small decisions behind a very good bite.

Detailed golden layers of a croissant
CRISP OUTSIDE. SOFT WITHIN.
  1. 01 / TIME

    Let the dough rest.

Resting helps dough relax and develop. It gives the next stage a better starting point.

  2. 02 / FOLD

    Build the layers.

Thin sheets of dough and fat are folded together. In the oven, those layers separate into a light, delicate structure.

  3. 03 / BAKE

    Look for the colour.

Heat creates a crisp outside and a tender centre. That contrast makes pastry so satisfying.

  4. 04 / ENJOY

    Keep the finish simple.

Good texture and flavour do most of the work. Add a coffee, some company and a few minutes to enjoy it.
